Raspberry & White Choc Cookies

Raspberry & White Chocolate Cookies 

Today I made these delicious cookies for my work colleagues and they were so yummy I just had to share the recipe so that you too can make these!     

They take 45mins from start to finish and makes up to 30 cookies depending on how you roll them.

Ingredients

  • 225g unsalted butter,softened
  • 225g caster sugar
  • 170g Carnation Squeezy Condensed Milk
  • 100g frozen (or fresh) raspberries
  • 300g self-raising flour
  • 100g white chocolate, broken into chunks

Method 

  • Heat the oven to 180 degrees (160 fan oven)
  • Cream butter, sugar, and condensed milk until light and fluffy
  • Add in the white chocolate chunks
  • Mix the flour with your hands, to form a nice soft cookie dough
  • Gently mix in the raspberries
  • Grease and line baking tray(s)
  • Roll the cookie dough into balls and press down gently on a baking tray
  • Bake for 12-15mins until golden but not too dark

Tips 

  • I use two baking trays at once to bake 9 cookies on each tray and bake in batches
  • If there is a lot of raspberry juice in a cookie, bake for slightly longer as the cookie will be quite wet and take longer to cook
  • Take the cookies out of the oven and out of their tray (lifting the greaseproof paper)and leave to cool slightly on the side which will allow them to harden up before taking off the greaseproof paper. Cookies will appear soft/flimsy when out of the oven but they harden up after a few minutes.

6 steps to a #productive day.

Having a productive and positive day is extremely important to me, and I am sure it is important to you, too! I have put together a selection of my top tips/advice to share with you in the hope that you too will have productive and positive days!  


Have a good morning routine 

For instance, wake up when you actually set your alarm and don’t keep snoozing. Research shows that you wake up feeling better and more positive if you wake up straight away. Also, having a glass of water as soon as you wake up can kick-start your metabolism for the day and your body will absorb vitamins and iron better if you drink water before you eat your breakfast. I also plan my outfit for work the night before so that I don’t have to rush around in the morning trying to figure out what to wear!

Have a filling, uninterrupted and healthy breakfast

Having a filling, healthy breakfast will set you up for a great day in terms of giving you the energy to fulfill your daily tasks, focus and of course keep you nice and full so that you don’t snack unnecessarily and eat junk. I have a great recipe for a healthy breakfast – #OvernightOats I also like to not be interrupted or distracted when eating my breakfast. Have a break from social media/your phone whilst eating your breakfast so you can have your breakfast and think clearly about your goals for the day.

Set your goals and tasks for the day

Having a personal notepad and or post it notes really help me remember what it is I need to do and having a mini to-do list for each day helps me make sure I am staying on track and being as productive as possible. Crossing off tasks is extremely satisfying and I aim not to have more than one mini task left on my list to continue to the next day. These can be both work and personal tasks but I tend to keep my lists separate.

Avoid checking your phone/social media too much 

Did you know that the average person unlocks their phone at least 30 times a day! Which sounds insane. I find it really hard to concentrate on tasks if I have my mobile phone at hand when I need to be doing something that requires full concentration, particularly at work. I find keeping my phone in my work drawer or away in my handbag and only checking during breaks really helps. I also turn off Whatsapp/Social Media notifications if I do have my phone nearby to limit notifications popping up on the screen. Another thing that needs to stop when it comes to phones it having your phone in your hand or staring at your phone whilst having a real-life conversation with somebody!! Improve your social skills and focus on the real-life present moment not what is going on in your phone, you can always catch up later.

Be realistic with your time and expectations

Don’t put too much pressure on yourself. Only set goals and targets for what you know is realistic timewise and achievable. This counts for both work life and personal. Keep on top of your to-do list for your work but also don’t overbook yourself in your personal life in terms of meeting friends and don’t commit to plans you know you realistically won’t be able to keep.

Excercise

Whether it be going to the gym, or making sure you take a walk on your lunch break. Exercise is key to having a good day. I try to have at least a 10-15minute walk at lunch time, even if it is just walking to the shop, and then I walk home from work which takes around 45mins. Exercise helps to keep you fit, healthy and is known to improve both positivity and productivity.

MONDAY Already?! 
Another week, another chance to start a fresh week with a positive vibe!

I always look at Monday’s as a new opportunity to forget any setbacks from the past week, reflect on what I can do better and look ahead to having a great week!

So how can we make sure we have a productive, positive and great week? 

  1. Set goals for the week: been putting off going to the gym? Make a goal with yourself to attend at least once this week! This can apply for anything you have been putting off.
  2. Set a daily target for the week: my personal daily target this week is to wake up 30 minutes earlier each day so I can start my day settled, calm and ready for the day!
  3. Create a personal to do list: on Monday mornings, write down everything you need to/hope to achieve this week and cross each task off as you go!
  4. Make time for friends and family: all too often we can get caught up in our daily lives of work and hobbies that we forget to make time for our loved ones and friends! It is important to maintain these relationships within our daily routines as we all need somebody someday! Make some plans to meet up with friends and loved ones if you can, if not catching up with a good phone call will do!

Have a slogan for the week: 


Quit slackin’ and make shit happen! This is my personal slogan for this week and I will follow this each day to make sure I achieve my maximum potential this week.

Don’t Cry Over Spilt Milk!

‘Don’t cry over spilt milk.’

I have heard this saying several times throughout my life, often in reference to something negative however, I thought about this saying and feel extremely positive!

I am sure there are plenty of us that can relate a certain situation to the phrase ‘don’t cry over spilt milk’ – we are probably thinking of that situation right now!

However, this phrase should be used as an opportunity to think positive and move on from any situation that we have regrets over.

Whether it be a missed opportunity, letting someone or something go, regrets within a relationship, not going for that McDonalds when you were hungry (i joke!)- the situations are endless.

The fact of the matter is, we cannot change the past or anything that has been done. All we can do is accept what it is (not what it could have been) and decide to use the situation as a learning curve for personal development and progression.

All too often, people spend an exceptional amount of time dwelling on what could have been and not thinking about what WILL be and the opportunities for the future.

For example, if you have had a recent break-up and you regret ending the relationship/wish things would have turned out different, please do not sit there sad and miserable. Live your life for yourself, not for others, and whatever will be will certainly be.

Also, if you didn’t get a job that you had tried really hard for – there is an opportunity to build on what went wrong and use this as a development and something to build on in order to help you achieve that big job!

With setbacks and missed opportunities we learn, grow and develop and should always use these opportunities to make us a better person, and build better situations for ourselves.

Everyone knows that unexpected or unplanned things happen in life, sometimes on a daily basis, but with a positive attitude life is easier and brighter.

We must learn that not everything or anyone is owed to us and missed opportunities/ setbacks are often blessings in disguise!

You have as many hours in the day as Beyonce! 

Love her or hate her – Beyonce is an inspiration to many. Not only is Beyonce super talented, but she is a smart business woman who has built an incredible empire and is hugely successful.

But why can’t this be you? As the title says, we have as many hours in our day as Beyonce. Ok, so being a multi-million-pound worth singer might be slightly unreachable (particularly if you cannot sing!) but her approach, attitude and business mind has helped make her successful.

Beyonce is a shining example that we can achieve what we set our minds to, no matter our background or upbringing!

The point is, if you have a goal or target you want to achieve – utilize your time wisely and do not stop until you have what you want! You can be anything you want to be – the sky really is our limit.

It is so easy to get distracted from the likes of social media, however set the non-necessities aside until you have done what you need to.
